Yet another of Eileen's Resident Courses while she worked for the National Confectioners Association (NCA).
This course appears to have a focus of coated candy. These were always held at the University of Wisconsin at Madison, where there's a huge lab and training spaces just for this purpose. Eileen was in her element.
